We are incredibly lucky on Bundjalung Country to be surrounded by an extraordinary variety of native Australian ingredients — plants that have grown here for tens of thousands of years, with flavour profiles and healing properties unlike anything else on earth. Most of us walk past them every day without knowing what to do with them.

Fermentation and bush foods are a natural combination — fermentation not only preserves these ingredients at their most potent, it amplifies their healing properties and unlocks flavours that are entirely their own.

In this session we'll be making:
Warrigal greens kimchi
Davidson plum vinegar
Lilly pilly mead

Plus potentially more. The menu may shift slightly as we get closer to reflect exactly what's available and at its best.

We make everything together as a group and everyone takes home a full haul of jars.

All levels welcome. Everything provided. You take everything home.
